Here is a great recipe for when you are feeling a pasta night but want a twist on the classic pesto! This walnut gremolata is super easy to make and can be saved for multiple uses. Parsley is a great addition to this sauce as it is rich in antioxidants and loaded with nutrients that protects your eyes and improves heart health. 1/2 cup chopped walnuts
1 garlic clove
30g / a bunch fresh parsley
1/4 tsp chilli flakes
1/2 tsp salt
Zest of 1 small lemon + Juice of half that lemon
1/2 cup extra virgin olive oil
How to Make in 3 simple steps
1. Toast the walnuts in an oven preheated to gas mark 6 / 200C for eight minutes, or until fragrant and a shade darker.
2. Allow to cool, then blitz in a blender with the garlic, parsley, and chilli flakes.
3. Stir in the salt, lemon zest and juice, and olive oil, and then taste and check if it needs anything (more salt / heat, etc). You want it quite intense so that it stands up to being tossed through pasta. (Makes enough for 4-5 portions of pasta)
